DREW DECKMAN
CHEF & CO-OWNER
Chef Drew Deckman is a Michelin-starred chef and leading advocate for ethical farming and the Slow Food movement. His commitment to sustainability is at the core of every concept in the Deckman’s restaurant group — from Deckman’s en el Mogor, Conchas de Piedra, and Ensō Omakase in Valle de Guadalupe to his first U.S. venture, Deckman’s North at 3131 in San Diego.
This new cause-driven restaurant extends his earth-to-table philosophy, prioritizing responsible sourcing and environmental stewardship across all operations. In 2024, Conchas de Piedra was awarded both a Michelin Star and a Green Michelin Star, while Deckman’s en el Mogor received a Green Michelin Star, recognizing their leadership in sustainable gastronomy.
Trained under culinary legends like Paul Bocuse and Jacques Maximin, Drew earned his first Michelin Star in Germany in 2000 and continues to champion sustainability through his role as Regional Governor for Slow Food International and as a member of Monterey Bay Aquarium’s Blue Ribbon Task Force. He also serves on several sustainability boards and is the host and executive producer of the Amazon Prime docuseries Ingrediente México.
